Bottled Blonde Gilbert

Bottled Blonde Pizzeria + Beer Garden is expanding to the East Valley with an all-new restaurant, bar and beer garden in Downtown Gilbert’s Heritage District.

Founded in Scottsdale in 2014, the new two-story Bottled Blonde in Gilbert is designed to fit seamlessly into the historic downtown community with features like a climate-controlled retractable rooftop, glass walls and LED screens to create immersive art displays while offering a full-service restaurant, bar and beer garden. Set to open in 2025, it will also serve as a hub for sports and entertainment with oversized TVs and state-of-the-art light and sound installations.

“We are honored to bring Bottled Blonde to the East Valley and have been looking for the right space in Downtown Gilbert for years now,” says Les Corieri, co-owner of Bottled Blonde, in a recent press release. “I can’t wait to invite everyone over for some pizza and pints, kicking back at the communal tables watching the big game and soaking in the good vibes.”

Joe Absolor, the chef behind Bottled Blonde Gilbert’s menu, will bring his culinary expertise to the new spot. The menu will showcase modern Italian favorites, including gourmet pizzas like the Forager (roasted mushrooms with fontina and arugula), salads and artisan sandwiches made on house-baked bread. Other highlights include starters such as shrimp and calamari fritti and dry-rub wings. Brunch enthusiasts can indulge in unique specialties like Butterfinger French Toast topped with vanilla bean whipped cream.

The beverage menu at Bottled Blonde Gilbert will include craft cocktails, frozen beverages, fine wines, premium beers and shareable drinks. Guests can keep the party going with options like a Mimosa Tower featuring a trio of bottles of bubbly, a 128-oz. Beer Tower or its signature bottle service experience.
